This is one of my favourite things to whip up at a moment's notice when someone comes over to my place. For me, it's kind of a tradition, something I learnt from my dad, who has always done the same, and who I owe the credit to for this amazing recipe.
The recipe is ridiculously easy considering the result you get, and better yet, is made with pantry friendly ingredients. So, you can keep everything on hand for whenever you need to quickly throw something together that will delight your guests!
Ingredients
(For the hummus)
1 can chickpeas, drained and rinsed
3 tablespoons of tahini
1 lemon, juiced
1 clove of garlic, minced
1 heaping teaspoon of cumin seeds
(For serving)
Extra virgin olive oil
Hot paprika
Fresh parsley, roughly chopped
Lebanese flat bread
Method
Step 1: Prepare the cumin seeds
Dry roast cumin seeds on a small frypan until smoking.
Transfer to an electric spice grinder (or a mortal and pestle) and grind the seeds to a powder.
Step 2: Drain and rinse chickpeas
Drain the chickpeas then rinse them under cold water for a minute or so. Reserve a few whole chickpeas for garnishing.
Step 3: Make the hummus
Add the drained chickpeas, ground cumin, minced garlic, lemon juice and tahini, and blitz until smooth (you may need to add a little water to get to your preferred consistency).
Step 4: Serving
Move the hummus to a serving bowl and top with a dash of olive oil, generous amounts of chopped parsley and paprika, and finally the reserved chickpeas. Serve with Lebanese bread.
